How to Make Homemade Ice Cream in a Bag

We’ve all had those moments of craving a pint of cold ice cream on a hot summer day or night. If you don’t really feel like running to the supermarket to pay $5.99 or more for a name brand ice cream, try making Ice Cream in a Bag. This is a simple way to make homemade ice cream without buying an ice cream maker.

Making ice cream in a bag is also great because you get to add your own ingredients. You can use a sugar substitute like Splenda or Stevia instead of white sugar and add sugar-free cookies and fresh fruits. You can also reduce sugar intake by using Half and Half instead of regular milk. The ideas are endless.

On this particular occasion, I decided to make chocolate ice cream with chocolate chip cookie pieces and strawberry ice cream with shortbread cookie pieces (see pics).

photo 5What You’ll Need…

Ice Cream in a Bag

  • About a cup of Half and Half or heavy cream (heavy cream is probably best for creamy ice cream, but Half and Half is the lowest in sugar)
  • The added ingredients you want (such as sliced frozen strawberries, cookies, Oreos, a bit of vanilla extract or vanilla beans for vanilla ice cream or a scoop of chocolate powder to make chocolate ice cream)
  • One tablespoon of Splenda, Stevia OR regular sugar
  • 1 or 2 small, strong zip lock bags
  • 2 large, strong zip lock bags
  • At least 2 cups of ice
  • 3 tablespoons of Kosher Salt

(Whatever you do, don’t add any water to the small bag full of cream! That makes it too icy.)

Instructions

Add your half and half, Splenda (or sugar), and all of your other desired ingredients to the small Ziploc bag and seal it securely. You might also add a tiny sprinkle of salt to the cream to bring out the flavor more. Reinforce with an additional small ziploc bag if you think it’s needed. Shake everything together thoroughly and make sure that there aren’t any leaks.

Ice Cream in a BagNow get the large Ziploc bag. Add ice along with the salt. Reinforce it with another large Ziploc bag just in case.

Place the small bag of cream inside of the larger Ziploc bags and zip those closed securely as well. Shake vigorously for 10-15 minutes. (The shaking process takes some time, but you can look at it as a moment to get some exercise and burn off some calories before you enjoy your cold treat 🙂

Scoop the ice cream out of the Ziploc bag, add any toppings you like and enjoy!

Chocolate Brownies Made with Stevia & Coconut Oil

This recipe is for chocolate brownies and is a little healthier than other brownies because I have simply replaced all of the white cane sugar with a plant based sugar called Stevia. I also have replaced the butter and opted to use coconut oil instead.

I have always enjoyed baking homemade cakes and pastries. With all of the new research emerging about how white sugar negatively affects your health, I decided to use a more healthy sugar to bake with. My  health research has also made me think about the ill affects of butter on the heart and circulation. That’s why I’ve decided to make these substitutions. To my surprise the taste is not impacted much — I do not miss the white sugar or butter. Here’s the recipe for delicious chocolate brownies made with Stevia & Coconut Oil:

Ingredients

Stevia Brownies1 teaspoon vanilla extract
2 eggs
1 1/4 cup Stevia
1/2 cup flour
3/4 cups cocoa powder
1/4 teaspoon baking powder
1/2 teaspoon salt
3/4 cup coconut oil

Instructions

Preheat oven 325*

In a large bowl add
Softened coconut oil and cocoa powder, mix well
Then add
Stevia, mix well
Then add
Eggs
Flour
Salt
Baking powder
Vanilla extract, combine ingredients well
Then pour batter into a 8″ square baking pan, lightly greased for 30 minutes

Brownies are done when you stick a knife into the center and the knife is removed with no wet batter.  You can even add chocolate chips or nuts to brownie batter!!

Homemade Banana Cake Made Easy

I love baking for my friends and family. Especially, in the winter months. An added bonus is the lingering aroma of freshly baked goods, that permeates throughout my home. What everyone should realize is that, baking delicious desserts doesn’t always require purchasing expensive ingredients. For example, just last night, I realized that my bananas were turning brown. So, instead of throwing them away, I decided to make a homemade banana cake to enjoy with a freshly brewed cup of coffee. This recipe is super easy and quick to prepare.

Ingredients

2-3 Ripe Bananas
1 Cup Flour
1 1/2 Teaspoons Baking Powder
2 Teaspoons Butter
3/4 Cup Sugar
1 Egg
1 Teaspoon Vanilla Extract
1/2 Teaspoon Salt

Directions

Preheat Oven 350*
Now, in a medium size bowl add peeled bananas and mash with a large fork. In a large bowl, add sugar and butter. Blend until creamy.
Add egg, vanilla and bananas and stir together until blended. Add flour, baking powder and salt to the batter.
Pour batter into a nonstick cake pan.
Bake for 15-20 minutes or until golden brown (you will know it’s done when you insert a butter knife into the middle of the cake and knife comes out clean)

Enjoy your homemade banana cake!!!
