Southwestern Chicken With Pasta Shells

If you are in search of an exciting twist for your chicken dinner, you might want to give this recipe for Southwestern Chicken with Pasta Shells. It’s very flavorful and will leave you and your guests wanting more.

Ingredients

3 Chicken Breast Cut into small pieces (skin and bone removed)
1 Box of Pasta Shells (cooked al dente)
1 Can of Black Beans (drained)
2 1/2 Cups of Salsa
2 Tablespoons of Olive Oil
1/2 Yellow Onion (chopped)
1/2 Red Pepper (diced)
1/2 Green Pepper (diced)
1 Package of Cream Cheese
3 Teaspoons of Cumin
2 Teaspoons of Garlic Powder
1/4 Teaspoon Salt
1/4 Teaspoon Black Pepper
2 1/2 Cups Cheddar Cheese (shredded)

Southwestern Chicken With Pasta Shells

Instructions

In a large skillet, on medium high heat add oil, chicken breast, peppers, onions and sauté. Cook until chicken is done. Now add the cumin, garlic powder, salt and pepper to the pan and combine. Place heat on low and add salsa. Mix well. Next, add cream cheese and allow cheese to melt and blend with mixture. Add black beans, cheese and pasta shells. Stir with a large spoon. Put mixture into a large casserole dish, cover and bake at 325* for 10-12 minutes. Optional, to add a dollop of sour cream to plated dish.

** This recipe for Southwestern Chicken With Pasta Shells is pretty much a one pot meal. Keep in mind that you can use chicken thighs as a substitute for chicken breast.

Meatball Stroganoff with Rotini Pasta

This is a delicious dish to make and rather simple to prepare. You can use ground beef, turkey, pork or chicken when making your meatballs. The meatballs and sauce in this recipe for Meatball Stroganoff with Rotini Pasta — full of herbs. #YUM

Ingredients for Meatballs

1 Lb Ground Beef
1 1/2 Tablespoons Basil (dried)
1 1/2 Tablespoons Oregano (dried)
1/2 Teaspoon Rosemary (dried)
1/2 Teaspoon Salt
1/2 Teaspoon Pepper

Stroganoff Rotini

Ingredients for Sauce

2 Cups of Beef Broth
1/2 Cup Sour Cream
1 Cup Heavy Whipping Cream
1/2 Tablespoon Basil
1/2 Tablespoon Oregano
1/2 Teaspoon Salt
1/2 Teaspoon Pepper

Preparing Meatballs

In a large bowl place ground beef and spices. Mix together using your hands. Make individual meatballs the size of golf balls. Then, in a large skillet on medium high heat, add 2 tablespoons of oil. Place meatballs in skillet and brown on all sides. When done remove meatballs from skillet and set aside.

Preparing Sauce

Now, in that same skillet add beef broth, to deglaze and bring to a boil. Allow broth to reduce by half. Then lower heat, add herbs, salt, pepper, whipping cream and sour cream. Whisk ingredients together. Place cooked meatballs into the sauce. Allow to simmer for five minutes.

Serve over rotini pasta, that is al dente.

You can use what ever type of pasta you like. I prefer rotini because it holds onto the sauce better than the traditional egg noodle. The choice is yours!

Homemade Bolognese Sauce with Penne Pasta and Sour Cream

This recipe for Homemade Bolognese Sauce with Penne Pasta is one of my all time favorites. This is not a loose type of sauce but rather a meaty, rich and super tasty meal. Many people use a combination of ground beef and pork, but I really enjoy using just ground beef. As for the pasta, you can use what ever pasta that you enjoy the best. I prefer penne because the hollow middle fills up with the thick meat sauce.

Ingredients

1 box of Penne Pasta (Cooked Al Dente)
2 Pounds of Ground Beef (80% meat, 20% fat)
2 Tablespoons Of Extra Virgin Olive Oil
1 6 Ounce Can Tomato Paste
3 8 Ounce Cans Of Tomato Sauce
1 Teaspoon Of Sugar
1 Small Onion Diced
1 Small Green Pepper Diced
2 Stalks Of Celery Diced
2 Medium Carrots Diced
3 Cloves Of Garlic Grated
1 Beef Bouillon Cube (dissolve cube in 2 tablespoons of very hot water)
2 Tablespoons Of Dried Oregano
1/2 Teaspoon of Dried Chili Flakes
1/4 Of Red Wine
1/2 Teaspoon Of Salt And Pepper ( to taste )

Instructions
In a large sauce pan on medium heat add the olive oil, diced onions, peppers, carrots and celery and sauté until soft. Remove from pan and set aside. In the same pan, on medium heat, brown the ground beef until done. Remember, not to mince the beef. You want the meat rather chunky. Drain excess oil and discard. Now add the sautéed vegetables to pan. Add the tomato sauce, tomato paste, sugar and stir well. Bring mixture to a simmer, then set heat on low. Add the grated garlic, oregano, red pepper flakes, salt, pepper and cook on low for 30 minutes. Remember to gently stir sauce during this time so that sauce does not stick to bottom of pan. After 30 minutes add red wine and cook for an additional 5 minutes. Serve meat sauce over pasta with a dollop of sour cream.
