Homemade Mini Chimichangas Recipe

Homemade chimichangas are one of my favorite recipes to make at home.  They are delicious little flaky pockets filled with Mexican inspired ingredients.  I can remember the first time that I tried them.  It was a cute Mexican restaurant located on West 4th Street in Manhattan.  It was love at first bite!  I was totally surprised to find out, later on, that they were not originally an authentic Mexican dish.  I also, realized that there is no wrong way to make them.  Chimichangas are basically burritos that are deep fried.  However, I do my best to stay healthy, so needless to say, that I am not keen on deep frying anything these days!  I figured out a healthier version that maintains its flavor and is very satisfying.

Ingredients

1- 2 Skinless Chicken Breast
1/2 Cup Mozzarella Cheese ( or cheese of your choice )
1/2 Cup Refried Beans
1/4 Cup Finely Diced Mushrooms ( optional )
1/2 Cup Finely Diced Onion
1/2 Cup Finely Diced Green Pepper
2 Tablespoons Chipotle Peppers In Adobo Sauce
2 Teaspoons Garlic Powder
2 Teaspoons Onion Powder
1 Tablespoon Cumin
2 Teaspoons Salt
1/4 Cup Vegetable (or Peanut) Oil
4 Tablespoons Water

Instructions

In a large non stick skillet, set heat on medium, add two tablespoons of water and add chicken breast to thoroughly cook breast(s) for about 3-4 minutes each side.
Remove breast from skillet and shred breast in a large plate using two forks.

image1Now, on medium heat, add to skillet:
Onions
Green peppers
Mushrooms
Sauté until soft

Add shredded chicken to skillet and add:
Garlic powder
Onion powder
Chipotle
Cumin
Salt
Water
Combine well

image2Simmer for about 3 minutes and remove from heat with lid on

In a large skillet place 1/4 cup of vegetable oil on medium high heat

Assemble the chimichangas.
First, warm tortillas in microwave for 30 seconds. Then, spread approximately 1 teaspoon of refried beans on a tortilla, image4add cheese and 1 tablespoon of chicken mixture.  Next, fold tortilla in half, then fold in the sides and roll over. Repeat.

Place Chimichangas in oil, folded side down until golden brown on each side.

Optional Garnishes
Sour cream
Salsa
Pico de gallo
Guacamole

indexI first found this book in the library. It was so on point and hit home. The premise is that there are rules of life, and when we’re out of sync with those rules, we have hard times. Each chapter made me think of my past mistakes and how I have the power to choose to stop making the same mistakes over and over again.  This book will inspire readers and teach them how to live life to the fullest.  It will forever be on my coffee table. 2) Why Doesn’t He Love Me? By L. Lynn Gilliard

We all grow up with preconceived ideas about what the “perfect” life should be — careers, love relationships and friends.  I learned by reading this book that we are totally in control of our experiences and the people that we allow to enter our lives.  Choosing the most positive, genuine and loyal people to exist in your life is a major key to having a happy life.  However, it’s most important to learn how to enjoy your own company.  I’ve already started to spread word about this book to friends and family.  It’s a book that you will read and reread to reaffirm the positive messages. 3) Don’t Sweat The Small Stuff By Richard Carlson P.H.D
smallstuffI enjoyed reading this book because I have always been told that I tend to overreact and take things to seriously or literally.  I learned from reading this book that life is too short to over analyze life’s everyday occurrences.  This is the type of book that you digest in little bites — one chapter every night before bed. I will absolutely, always remember the lessons learned from this book. Available as a paperback.

3 St. Patrick’s Day Must Haves – Stuff to Wear

St. Patrick’s Day is soon approaching and many of us are planning to visit a bar, party or parade to enjoy the day’s festivities.  Whether you are of Irish descent or not, we all want to have fun celebrating on St. Patty’s Day!  So, I did some searching on my favorite site (Amazon) to look for some humorous costumes, shirts and accessories that would make the day enjoyable for me and my friends.

Shamrock Leg Warmers — Let’s Get Physical!
